Adopted Ed - A Story With Heart

Adopted Ed is the charming story of a boy named Ed who is adopted.  When bullies at school begin teasing him because he was adopted, his Mom helps him get through the situation.  His parents also help him when he begins to feel a void from not knowing who his real parents are.  Not only does this story address adoption, it also celebrates the differences in all children.  The vivid illustrations are simple and engaging.

I think this would make a great gift for an adopted child, or even a child who has questions about what it means to be adopted.  I also think it would be a great classroom book, especially if there happened to be an adopted child in the room.  I'm looking forward to seeing more from this author who celebrates difference in children!  You can buy the book at amazon (link below), or you can find out more about the author here.

Spinach Artichoke Dip – So Easy a Three Year Old Can Make It!

My daughter loves cooking, so I’m always excited when we’re making something that she can really get involved with.  My In-Laws have appetizers the evening before Thanksgiving, so I thought spinach artichoke dip would be a great thing to bring that Little Miss could help make.

I was a little nervous about bringing the dip – my husband’s parents can be picky eaters, but they both loved it!  This is a great dip to take to your holiday gatherings.  If you happen to end up with leftovers, the dip also makes a great quesadilla filling!

CSA Cooking - A Thanksgiving Side Dish

Recently, I got to attend the Thanksgiving veggie potluck with Little Miss and her cousin.  With our busy schedule, I rarely get to attend anymore, and it's something I really miss.  This month was our early Thanksgiving meal.  Everything was so delicious!  Since I had a hard squash and some pears that needed using, I made this dish.  I loved the sweet and savory combo!

CSA Cooking - Red Curry with Turnips

Not being able to pick and choose the vegetables you get each week can lead to interesting combinations.  This is one of the things I have loved about the CSA - trying things in ways that I never would have before!  
I had been craving red curry for a while, but wasn’t sure which vegetables I wanted to put in it.  When I got a single turnip in my CSA box and ended up with a bunch of broccoli from a gathering at my house, I decided that that would make the vegetable base for my curry.  I had no idea how it would turn out, but I really liked it!

Novica - A Company I Love

Since Christmas is just around the corner, I thought I’d highlight a few of the companies I love.  Although we try to limit the amount of “things” we buy in our house (first rule- reduce!), occasionally I like to buy a little something for myself or a good friend.  If I’m not buying local, I want to buy from a company that makes a difference.  Novica is one of those companies, and I’ve shopped there many times.

CSA Cooking - Hot Creamed Pea Dip

Since peas are not one of my favorite foods, using the cream peas I got in my CSA box have been challenging.  However, I joined a CSA with the intention of trying things I normally wouldn’t eat, so I was determined to find a way to fix them that I liked!  I was inspired by a recipe from Bon Appetit for Black Eyed Pea Hot Dip.  Here is my version below - I think it turned out great!  I have since served this dip at several parties and have gotten rave reviews each time.  

Hot Creamed Pea Dip

Ingredients:
  • 1 & 1/2 cups cream peas (or other peas)
  • 3 oz cream cheese, softened (I used veggie cream cheese)
  • 2 garlic cloves
  • 1 tsp cumin
  • 1 tsp chipolte chili powder
  • 1/2 tsp cayenne
  • 1/4 cup salsa
  • 1/2 cup sharp cheddar

  1. Pulse the peas and garlic in a food processor until smooth.
  2. Add the spices and cream cheese, process to blend.
  3. Stir in the salsa (I also added some finely chopped banana peppers at this point).
  4. Pour mixture into a 8” square casserole dish and sprinkle with cheese.
  5. Bake at 350 degrees until cheese is bubbly, 20-25 minutes.


This makes a very tasty dip.  Adjust the chili/cayenne to suit your tastes.  I also used the dip as a quesadilla filling, along with some fresh spinach - it worked great!

Our trip to the Great Gulfcoast Arts Festival

This weekend we spent a lot of time at the Great Gulfcoast Arts Festival.  The festival lasts all weekend, and is one of the biggest ones in Pensacola.  There is definitely something for everyone - food, great music, art, and an amazing children’s area!


I was especially excited to take Little Miss to the children’s area.  We took here last year and she had fun, but I knew this year she would have more of an idea of what was going on and be able to participate more.  

We started off at the sand art table.  Little Miss still has the one she made last year and often carries it around, so I knew we needed to make another!  She had a great time picking the colors, and quickly learned how to put the funnel in the jar and pour in the sand. 


Next we headed to the bracelet table.  She had a great time picking out the beads, and she was able to put them all on the bracelet herself.  


We stopped by the paper flower table - the wind was pretty bad, so instead of Little Miss trying to make the flower herself she just picked the colors and the helper made it for her.  She then headed to the puppet table, where she had a great time decorating her puppet. 

 
If you’ve never been to this art festival, go ahead and put it on your calendar for next year - it’s always an amazing time!! You can spend hours looking at the artwork, listening to music, or just enjoying the great weather and people watching!

Wordless Wednesday

It's been one of those weeks - I was in a fender bender on Monday, got sick yesterday....I had planned on doing a post about the Great Gulfcoast Arts Festival we attended this weekend, but just haven't gotten around to it yet!  Hopefully it will be up later today.  Until then, her are some pictures of Little Miss and her cousin at the festival.


Little Miss found the small beach area and wanted to go play.  Her cousin hates the sand, but ventured out anyways.  Little Miss is helping her zip her jacket up.

This Holiday Season, I hope That I Remember to Give!

Thanksgiving is approaching.  I love Thanksgiving, because it doesn’t revolve around gifts, just simply being thankful and sharing with those around us.  I recently read an article that pointed out that while it is wonderful to remember God’s bounty, we also need to remember that it is our duty to protect what God has so graciously given to us and put in his care.  

As we are all too aware now, the abundance of nature is directly proportional to what we put into it.  If we treat the Earth with love and respect, we will receive bountifulness in return.  If we take from the Earth without ever given back, we get harsher climates, unfruitful soil, a loss of species - the list goes on.  


Humans are the only beings on this planet with free will.  While other animals act on instinct, we daily make choices that effect not only ourselves, but everyone around us as well.  I hope this Thanksgiving you take a few minutes and give back to Mother Earth, who has given us so much!  

Plant something, recycle, or buy some local/organic produce.  Pledge to get rid of toxic cleaners or use less gas, start a compost pile!  Create a bird sanctuary in your backyard.  The list goes on.  
I hope all of you have a wonderful holiday season, and remember to give back!

CSA Cooking - Balsamic-Glazed Chickpeas With Mustard Greens

This week brought another vegetable that, although common in the South, I’ve never been a big fan of – Mustard Greens.  Like most vegetables I grew up not caring for, I figured it was probably because of the Southern method of cooking many items.  Southerners tend to like to cook things for long periods of time, which is not a cooking method that I am fond of.

Fortunately for me, Susan over at Fatfree Vegan had a delicious sounding recipe for Balsamic-Glazed Chickpeas and Mustard Greens.


Other than using a sweet onion instead of a red onion and brown sugar instead of agave nectar, I stayed true to her recipe.  It turned out delicious!  This is definitely one of those that depends on the quality of balsamic you use.  It’s also really easy to prepare – the only hard part is making sure those greens are clean.  It’s amazing how much dirt comes out of them. 

If you’re looking for a great way to prepare greens, I highly recommend you give this a try.

Our Halloween Weekend

We had a very busy Halloween weekend.  It started on Friday, when we went downtown to Trick or Treat with one of our friends.  He and Little Miss had such a great time seeing all of the other costumes and playing in the park!  There was Trick or Treating as well, but we didn't do much of that - I didn't want a ton of candy to deal with!




Saturday we took a Halloween break and Little Miss went to visit her Grandparents with Daddy while I went to a wedding.  We all had a great time!

Sunday Little Miss and I went to my friend's house to pass out treats.  We did a little Trick or Treating, but not too much.  What a fun weekend!
